Hobbyboss has 1/35 Leopard 2A6M CDN kit.
Trumpeter has 1/35 LAV-3, Lav-3 TUA
Hong Kong Creations 1/35 resin Lynx C&R (trackjam models)
Maple Leaf Models, when they re-open have a whole list of Canuck Resin parts.
REALMODELS from CZ Republic, thumb4 produce LAV-3, Coyote, Leopard resin kits and many extra parts. They also sell Model Photo books of the real vehicles, I have done two of the 3 books with more in the pipe(shamless plug)
Storm Minatures in Ontario, produce the Leopard 2A6M CDN conversion kit for Tamiya's Leopard 2A6M
Best Value Models have AVGP fleet (Cougar, Grizzly & Husky) TLAV series as well, sold via ASMUIT in FRANCE.

How is that for a start....

Cheers

RealModels has put out some Canadian crew figs. So, far they are the only company that has lots of Canuck stuff for the modelers, including Tim Horton can labels.

Here is the linkie:

There are some shops in Canada that sell Miloslavs kits and books.
